THE OXFORD BLUE

As I drive every morning to Old Windsor it gives me another pinch of reassurance that The Oxford Blue is on the right spot. The wildlife and nature give me lots of inspiration for the menu of our pub-restaurant, opening in 2016.

Every season is special but for me game season is closest to my heart, as you know I try to promote this country`s heritage and what a great way to do it using game!

The differing wild diet of each animal brings a unique flavour to your plate.
Not forgetting, it’s not all about the meat. We are also privileged with incredible fruits and vegetables that grow throughout game season.

As part of our exploration we have been sampling locally sourced and farmed produce including meat and game from the Crown Estate, who have agreed to be one of our suppliers. The indigenous British game that live on the surrounding grounds, and the countryside with a choice of grouse, home-grown on heather moors, English partridge and majestic deer – all of that is just on our doorstep.

Everyone has their own preference when it comes to what drink should accompany their meal. However, for me, nothing beats a venison wellington with a glass of ale from Windsor & Eton brewery.
